Suggestions for hands-on Italian Cooking Class in Washington DC?

Looking for a hands-on class to take with my girlfriend. I’ve searched around the internet alot and haven’t found too much. La Academie de Cuisine would be great except their menu options aren’t what I’m looking for. Ideas please?
I’m looking for classic but traditional italian cuisine – lasagna, risotto, gnocchi, tiramisu, etc.

Where in Italy is the best to learn about Italian cuisine?

I am a student going to a program of culinary techniques and after next year I have plans to go to Europe for a couple of years to work as a cook in France and Italy. I wondered where in Italy is the best place to learn about classic Italian cuisine. I know I'm better at home or in town? I am also looking for a complete cultural experience. Thanks

In fact, an "Italian cuisine" does not exist, but the Italian cooking a lot of different in different regions. Everywhere in Italy you can find restaurants serving basic Italian specialties of pasta or pizza, but each region has its own characteristics. I think it best to choose a medium size city, look for a job at a local restaurant and learn little the secrets of local chefs. For example, Pavia, Mantua, Verona, Parma, Ferrara, Ravenna, Siena, Perugia, Orvieto, Viterbo, L'Aquila, Caserta, Lecce, Syracuse (all of them are also very beautiful cities.) In larger cities, obviously, there are excellent restaurants and chefs, but in the mean traditions typical culinary are less strong.
