Delicious, Easy Italian Comfort Food?
I’d like to find some recipes for authentic Italian COMFORT food. Nothing super complicated and gourmet like from the food network. My boyfriend is Italian and I want to cook something that would remind him of something his mom or grandma would make.
For me a real italian comfort food is polenta with pancetta and cheese. Just cook the polenta ( instant cooks in 3 minutes) then layer it with grated good asiago and parmesan cheese and cooked pancetta ( you can use bacon too) . yummy. If you like sour cream you can add some on top. Buon appetito!

Substitute for Vin Santo Wine?
There is a recipe in Gourmet Magazine for a pizza with Vin Santo (a sweet Italian wine) in the sauce. We don’t have any good wine shops here so I need to substitute it with something else. Any suggestions?
Try another sweet dessert wine – any late harvest or ice wine would probaly substitue.
If none of those are avialable look for a french sauturnes.
Vin santo is not only sweet it is also very viscous – for a recipe, you may not want to thin it out too much, but you could also try a sweet riesling.
